A Brazilian native, Ivan began his career with a commitment to excellence and to mastery of craft. His experience includes working at chef Thomas Keller’s three Michelin starred kitchen at Per Se in New York and at two Michelin starred Mugaritz in the Basque Country, chef Andoni Luis Aduriz’s award-winning home of nature-inspired innovation. In 2008, Ivan joined the three Michelin starred, globally acclaimed The Fat Duck in the UK. For four years he worked directly with chef Blumenthal in his Fat Duck Experimental Kitchen (FDEK) as Development Chef.
Cooking and research credentials firmly secured, Ivan’s desire to create a new culinary home brought him to Singapore. As a port city and a cultural melting pot, Singapore was a natural fit, honouring Ivan’s eclectic heritage that includes Italian, German, Russian, Spanish, Lebanese, and Syrian
Famed for taking the kitchen at Singapore’s Bacchanalia to its first Michelin star, Ivan opened his first restaurant, Nouri, in 2017
Ivan’s award-winning craft, his insatiable curiosity and fascination with the studies of cultural evolution finally found a home at Nouri, where the menu not only tells a story but establishes a sense of community. In the intimate Michelin starred restaurant and bar located in the old part of Singapore’s Chinatown, there is little to separate chef from diner.
